The perfect in-season salad – orange segments brighten the plate on a cold winter's day.


Ingredients

clementines or 1 orange
4 cups
baby spinach
2 cups
sliced mushrooms

celery root, peeled and julienned, or 2 celery stalks, sliced
12 cup
pepitas (green pumpkin seeds) or sunflower seeds, optional

Preparation
  1. Finely grate 1 tsp peel from clementine and stir into Dressing.
  2. Peel clementines, then separate segments.
  3. Place spinach in a large serving bowl. Add clementine, mushrooms, and celery root. Drizzle with Dressing, then toss to mix. Sprinkle with pepitas and serve.
Perfectly Balance Your Plate

Serve topped with Beef Tenderloin with Pinot Noir Sauce and crusty whole-grain rolls.
