Ingredients


Makes: 4 servings
  • 1 pkg Pulled Chicken Seasoning (Pkg of 3)
  • 1/4 C (60 ml) water
  • 1 lb (450 g) ground turkey
  • 1 large sweet potato
  • 1 Roma tomato
  • 1 avocado
  • 12 leaves iceberg lettuce
  • Toppings (optional): salsa

Preparation


 
  • In a large bowl, combine seasoning and water. Using your hands, crumble in turkey and mix well. Press into Rectangular Steamer. Cover and microwave on high for 6–8 min.
  • Meanwhile, peel and dice sweet potato, chop tomato, and slice avocado.
  • Remove turkey from steamer and place on cutting board.
  • Rinse steamer; add sweet potatoes. Cover; microwave on high 4–6 min.
  • Meanwhile, thinly slice meat.
  • To serve, portion meat in lettuce leaves and top with sweet potatoes, tomatoes, and avocado. Serve salsa on top, if desired.

Tip


 

Make Ahead Tip: Refrigerate cooked turkey up to 3 days. Slice, then pan fry until crispy.

Recipe tip: Swap ground turkey for ground soy round or pureed lentils.
