Power Bowls are perfect for meal prep. This one is a great way to use up leftover Donair and then simply assemble with a cooked grain, sliced veggies, and a dressing! You’ll have enough bowls for lunches for the work week.


Ingredients
12 cup prepared
Roasted Garlic Aioli
1 12 tbsp
hot water
14 tsp
sugar, optional
3
large tomatoes
2
English cucumbers
1
small red onion
5 cups
cooked quinoa
12 recipe prepared
Donair, sliced

Preparation
  1. For dressing, in a small bowl, whisk together aioli, hot water, and sugar, if using. Set aside.
  2. Chop tomatoes. Using Y Peeler, peel cucumbers lengthwise into ribbons. Cut onion in half; thinly slice.
  3. Divide quinoa, veggies, and donair between five bowls. Drizzle with dressing and sprinkle with topper, if desired.
Tips

Prepare a large batch of quinoa in the Multipurpose Steamer. Combine 2 cups uncooked quinoa with 4 cups water or broth. Microwave on high, uncovered, 20–22 min, stirring halfway through. Quinoa should be tender. Set aside to cool. Gently fluff with a fork before serving. This recipe yields about 5 cups quinoa (perfect for this power bowl recipe!).

Tomatoes are so delicious at this time of year. Switch it up and try cherry tomatoes, which come in a variety of shapes and colours; simply slice in half and add to your bowls.
