A refreshing Mexican-inspired salad with avocados and fresh tomatoes.


Ingredients

ripe avocados
3
tomatoes, cut into wedges
1 tbsp
2 tbsp
olive oil
2
limes, cut in half crosswise
Sea Salt, to taste
Black Pepper, to taste

Preparation
  1. Score avocados in quarters lengthwise, and cut each in half lengthwise. Carefully remove pits, and peel off shells. Cut into wedges, and pile in the centre of a serving platter.
  2. Arrange tomatoes around avocado wedges.
  3. Sprinkle Guacamole Dip Mix overtop. Drizzle with oil and, using a 2-in-1 Citrus Press, juice limes overtop.
  4. Season with Salt and Pepper. Serve immediately – before avocados begin to brown.
Tips

Health Tip: Tomatoes and avocados are a perfect good-for-you match. Both are great for heart health: tomatoes are rich in lycopene, and avocados are rich in healthy monosaturated fats.
